Food and beverage expert Steven Brown reveals his top 10 most-asked questions by golf clubs in 2011:
10. How can we maximise our food and beverage usage?
There are three ways to do this:
a) Conduct a food and beverage survey with your members to identify missed opportunities and to solve the age-old riddle of why only 20 per cent of them support your existing food and beverage offering.
b) Employ the right people to manage your food and beverage operation, not just the cheapest pair of hands available.
c) Consider expansion into the wider world of function catering.
Now let me tell you the last opinion is a subject that I shall be returning to in much greater depth in a future editorial. Suffice to say it is a complex area, not just because of the legal implications, and other issues, but most importantly, because of your members’ wishes regarding their club and how it operates.
